Sausage Mac and Cheese

2 cups shredded sharp cheddar

1 cup shredded Parmesan

1 pound pasta shells

4 tablespoons butter, divided

2 cups milk

1 large yellow onion, finely chopped

2 tablespoons all-purpose flour

1 cup Guinness beer, or other dark ale

1 teaspoon dry mustard

1 teaspoon kosher salt, plus more to taste

1/2 teaspoon freshly ground black pepper, plus more to taste

4 spicy pre-cooked sausages, sliced crosswise (andouille or spicy Italian are good)

Beer. Cheese. Butter. Spicy Sausage. Pasta. Boom! The inspiration for this recipe came from a dinner at Crossroads Cafe in Joshua Tree where I had ordered a soup with a side of mac & cheese. When the soup arrived I realized it was more cheese sauce than soup, with pieces of sausage held hostage mid-bowl, so I decided to pour it over my mac & cheese. Here’s our version of this sinful pairing. Even if Guinness isn’t your favorite beer, it gives the sauce great depth and a rich flavor that’s worth the splurge. —Mai-Yan
